Weetabix breakfast biccies

These are easy peasy

Ingredients: 

2 Weetabix crushed (heb)

5 tbsp of sweetener

2 tsp of choc shot (1 syn)

1 egg

Some orange essence

Splash of milk

Mix all ingredients together add dollops to baking tray  bake for between 5-10 minutes until firm flip and do same again. Enjoy

Ok so today I have made a couple of chicken dishes. Italian Chicken Pasta Bake and Chicken Curry

I’ve spent my day off completing an application form today, while my annoying next door neighbours blast their music. Sometimes wish I could pick my house up and move it. Anyway I digress.

Chicken Pasta Bake

Here goes recipe number 1 Italian Chicken Pasta Bake

Ingredients:

  • Onion
  • Chicken – I used a bag of frozen chicken breast
  • 2 mugs of pasta
  • Garlic – Lazy garlic all the way
  • 500g passatta
  • 1 tbsp. of tomato puree
  • Stock pot (Optional)
  • 1tsp mixed herbs
  • 65g of light cheese (10syns or hea)

Recipe:

Cook pasta as directed. Cook onions until soft, add garlic and chicken heat through until frozen chicken is soft, add passatta, tomato puree, stock pot and mixed herbs cook for a further 10 minutes add grated cheese (top tip use the small side of the grater so the cheese goes further). Cook in the oven on 180 for bout 20 minutes. I don’t usually time things I just tend so use my sense of smell.

The second recipe is from my friend  Sarah. Its so quick and easy

Chicken curry

Ingredients:

  • Onion
  • Mushrooms
  • Tin of chickpea dahl
  • Stock cube in a bit boiling water- any will do
  • Chicken (same as above)

Recipe:

Cook onions, mushrooms in a pan with a bit Frylight, warm chicken through, add chickpea dahl, add stock to the consistency you like. Heat through, jobs a good un all done and enjoy.

So today I went shopping armed with a list for my new journey. The plan is to make meals my kids will eat so cottage pie, lasagne and chicken curry are on the menu. I have chopped and grated carrots so I can just grab them out of the freezer and I’m going to make some black forest ice cream and fluffy chocolate mousse in case I need something sweet. Cottage pie is being prepared as we speak. I’m a big believer in being organised is the key to any success as that’s what I plan to be. The aim is to lose a stone and a half and beable to comfortably run 5km in 3 months. I don’t think this is unrealistic with 2lb a week being my target.
